🥗How to Make this Gluten Free & Vegan Quinoa Salad Recipe
Start by preparing the vegetables. Slice and quarter the cucumbers and halve the cherry tomatoes and olives.
Place the vegetables together in a large bowl and set the bowl aside.
In the small bowl, combine the olive oil, lemon juice, red wine vinegar, garlic and salt and pepper. Use your whisk to combine.
Add the cooked quinoa to the large bowl with the vegetables.
Drizzle the dressing mixture over the salad ingredients and gently mix with your wooden spoon or toss until combined.
Cover and place the bowl in the refrigerator for at least one hour before serving to allow the flavors to blend together.

Ingredients
- 2 ½ cups cooked quinoa cooled
- 1 cup English cucumber sliced and quartered
- 1 cup cherry tomatoes halved
- 1 cup olives halved
- ¼ cup olive oil
- 2 tablespoon lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon minced garlic
- salt and pepper to taste
Instructions
- Combine the cut cucumber, tomatoes, and olives in a large salad bowl, and set aside.
- Add the olive oil, lemon juice, vinegar, garlic, salt, and pepper to a small bowl, and whisk until well combined.
