Pancake dippers are long, skinny pancakes that are made to be dipped (like French toast sticks) and they usually contain a surprise inside!

You can eat them how they are… but they are dippers.
So dip them in your favorite pancake toppings!
What do you dip them in?
My favorite is straight-up maple syrup (the real stuff folks!) but here are some other good ideas:
- Fruit syrup
- Jam
- Honey
- Chocolate syrup
- Caramel sauce
- Nutella
- Peanut butter
Seriously… the sky is the limit here!
Equipment you need
To make these delicious pancake sticks you only need:
- A bowl and fork for mixing
- A spatula for flipping
- A griddle or skillet. I prefer to use an electric griddle as I find it easier to control the temperature and can cook a lot at the same time. I have this griddle. It’s affordable, nonstick, and heats evenly!
Ingredients for easy banana pancake dippers
Most of the ingredients to make banana stuffed pancakes can be found at your local grocery store, but you’ll find great deals on gluten-free ingredients such as gluten-free pancake mix online at Amazon or Thrive Market.
- Bananas.
- Gluten Free Pancake Mix. (my favorite is King Arthur Flour’s gluten free mix. You can find it on Amazon here)
- Vanilla. (make sure this is gluten-free! I use Watkins brand which you can find here.)
- Butter.
Do you want to make gluten free vegan banana pancakes?
No problem! Simply use a gluten free vegan pancake batter and use coconut oil for cooking! It’s really that simple.

How to make banana pancake dippers
The first step for making these simple banana pancakes is to prepare the pancake mix according to package directions. Adjust the amount of prepared batter depending on how many you wish to make.
Then add vanilla to the batter.
Melt your butter (or coconut oil) on your griddle or skillet.
While it’s melting, slice your bananas at a diagonal so you have long pieces.
One at a time, dip your bananas into your prepared batter and add to buttered griddle.
Cook the banana pancake dippers for 2-3 minutes on each side until golden brown.
Serve with syrup or your favorite pancake dip (see above for suggestions).
Can you freeze pancake dippers?
Yes, you can totally freeze these to heat up on a busy morning!
First, let the pancakes cool completely.
Then, layer them between sheets of waxed paper or special freezer paper in a freezer container or freezer ziplock.
These freeze for up to 2 months.
To reheat, either:
- pop them in the oven for 5 minutes or so on 350, or
- reheat in the microwave by wrapping in a damp paper towel and cooking at half power for 2 minutes, flipping halfway through
