What kind of beans should I use in this chili recipe?

For this recipe you can really use almost any kinds of beans in the pantry—but the beans you use will change up the flavor of the chili. 

You can use light and dark kidney beans for a more traditional recipe, or sub in pinto beans or black beans.  (I used 1 can each of kidney, pinto, and black beans).

A note of warning—do NOT use “chili beans.”  These are already flavored, not only do you want control over the flavor of your chili recipe, but some chili beans aren’t gluten-free!

Does chili have gluten?

Many store bought chilis and chili at restaurants do contain gluten.  Wheat flour is a common additive and is often used as a thickener. 

However, it is so simple and easy to make chili from scratch to ensure that it is, in fact, safe for people who are gluten-free.

Is chili seasoning gluten-free?

Most premade chili seasoning recipes are NOT gluten-free.  Most chili seasonings contain wheat flour as a binder/thickener, or are processed in facilities and equipment that also process wheat. 

Personally, I make my own gluten free chili seasoning recipe.  It’s SO simple to make up yourself, store in a jar, and have ready for chili night—and it only uses 5 basic spices.

If you’re looking for single gluten-free spices, such as gluten-free chili powder, these are my favorite brands.

How to serve the best gluten-free chili:

My favorite way to serve this chili recipe is to bake up a quick batch of cornbread. I rarely bake gluten-free from scratch, I’m a big fan of baking mixes.

My favorite gluten-free cornbread baking mixes is the Honey Cornbread mix by Krusteaz.  You can always make the cornbread the day before to save time.

You can also serve your chili over rice or over Fritos for Frito pie!  It is also great over French fries or hot dogs.

Don’t forget your toppings–you can top your bowl of chili with cheese, sour cream, avocado, sliced green onoins, the sky is the limit!

Need to eat dairy-free in addition to gluten free? Then top it with this easy to make dairy-free cheese sauce.

Substitutions for gluten-free crockpot chili recipe:

Gluten-free chili with dried beans

If you want to make chili with dried beans—go for it!  Just be sure to prepare and cook your beans first, then make the crockpot chili.  Canned beans are simpler and easier.

Gluten-free chili without beans

Not a big fan of beans?  No problem!  Sub cubed sweet potato or butternut squash instead, and follow the same directions.

Spicy gluten-free chili

Want your chili to have an extra kick?  You can use canned jalapenos instead of chilies, or add extra spice by adding in some cayenne or red pepper flakes.

Gluten Free Turkey Chili

Cutting back on red meat?  Simply sub ground turkey for the beef. Easy peasy.

Game Meat Chili

You can also make this same recipe using venison or elk!  It tastes great.

No time to get this crockpot chili ready in the morning?  Then prep ahead of time!

Be ready for those busy weeknights by prepping the chili the night before. 

You can brown the ground meat and pile it, with all the ingredients, in the slow cooker and stick it in the fridge with the lid.  Then, in the morning, simply stick the crock in the heating base and turn it on!

This gluten free chili recipe will be ready when you get home from work.

How to freeze gluten free chili

To freeze leftover chili, allow it to cool to room temperature, then fill labeled freezer bags and seal—careful to release all air. 

This can be stored in the freezer for 3 months—perfect for an easy dinner on a rushed night, or for topping nachos or French fries! 

Freezing tip: I like to freeze my bags flat on a baking sheet first for easier freezer storage AND quicker defrosting.

This simple recipe for gluten free crock pot chili couldn’t be easier to whip up! 

Most of these simple ingredients can be found at your local grocery store, but you’ll find great deals on gluten-free spices and even canned goods at Thrive Market.

  • ground beef
  • canned beans (I used 1 can each kidney, black, and pinto)
  • canned crushed tomatoes
  • canned tomato sauce
  • canned petite diced tomatoes
  • caned diced green chilies
  • diced yellow onion
  • homemade chili seasoning blend (* see ingredients for chili seasoning blend below)

Optionally, if you want to really pack this chili with veggies you could add one diced bell pepper, or even some diced zucchini or other squash.

This homemade chili seasoning blend only has 5 ingredients and makes 6 servings!

I always keep a batch available in a jar so it’s ready to go! It’s made of garlic powder, salt, paprika, cumin, and chili powder.

Tools Needed for slow cooker chili

To make this recipe, you’ll need:

  • a frying pan and spatula to cook the meat
  • a colander to drain the meat and beans
  • measuring spoons for the seasoning
  • a knife and cutting board to chop the onion
  • a slow cooker!

If your cans do not have pull tabs, you’ll also need a can opener.

Gluten Free Slow Cooker Chili Recipe: Step by Step

Step 1:

Prepare the homemade chili seasoning mix. Simply combine, mix well, and store in an airtight container until use.

Step 2:

Brown the ground beef (or turkey or game meat) in a skillet.  Once cooked through, drain with the colander, and add to the basin of the crockpot.

Step 3:

Drain and rinse the canned beans in the colander, and add them to the crockpot.

Step 4:

Add the rest of the ingredients: the tomatoes, green chilies, onion, and seasoning.  Stir and cover.

Step 5:

Cook the chili on low for 8-10 hours, or on high for 4-5. I prefer to cook on low–it really helps the flavor come together!

Step 6:

Enjoy your meal! Serve this warm bowl of chili with any of your desired chili toppings! (see post above for serving suggestions)

Ingredients
  

Chili Ingredients

  • 1.5 lb ground beef
  • 3 cans beans (15oz cans; drained & rinsed)
  • 28 oz canned crushed tomatoes
  • 15 oz canned tomato sauce
  • 15 oz canned petite diced tomatoes
  • 4 oz canned diced green chilies
  • 1/2 onion diced
  • 3 tbsp chili seasoning blend (see blend recipe below)

Chili Seasoning Blend

  • 1 tbsp garlic powder
  • 2 tbsp salt
  • 1/4 cup paprika
  • 1/3 cup cumin
  • 1/3 cup chili powder

Instructions
 

  • Prepare the chili seasoning by combining the spices for the chili seasoning mix. Once well combined, store in an air tight container until use.
  • Cook the ground beef in a skillet until browned. Drain the grease with a colander and add to the basin of the slow cooker
  • Drain and rinse the canned beans in the colander and add them to the slow cooker
  • Dump the rest of the ingredients into the crockpot: tomatoes, green chilies, onion, and 3 tbsp of seasoning. Stir and cover.
  • Cook on low for 8-10 hours or on high for 4-5 hours.
  • Serve as desired (for serving and topping suggestions, see the post above!

Hi Amanda,

I don't typically calculate these for my recipes due to them changing pretty dramatically depending on ingredient choices. It is pretty protein dense though and has a moderate amount of complex carbohydrates. The fat content completely depends on what kind of beef you use (90/10, 80/20, 73/27)

Yes, the chili blend seasoning uses 1/4 cup and 1/3 cup proportions. You only use 3tbsp of the seasoning blend in the recipe. Save the rest for your next batch of chili.
