Is boxed gluten-free mac and cheese healthy?
My stance is simple; if it’s gluten-free, it can absolutely be a great part of a healthy gluten-free diet.
Boxed mac and cheese is convenient, offering a satisfying blend of carbs and fats. However, it can be a bit lacking in the protein department and the extra nutrients that come from fresh produce.
But, we’re about to change the game with a recipe that not only maintains the convenience but also boosts the protein content and adds a nutritious punch with some wholesome ingredients. Stay tuned for a mac and cheese makeover that’s both delicious and nutritious.
How to make boxed gf mac and cheese healthier:
Give your boxed gluten-free mac and cheese a healthy twist by boosting protein and adding a veggie for extra goodness. There are various ways to achieve this including making the mac and cheese a side dish and pairing it with a lean protein such as lemon chicken thighs and a vegetable.
Or, you can prepare the mac and cheese itself to include more protein and add a vegetable and consume it as the main dish (as we do in this recipe!) This not only brings you a higher protein mac and cheese but also slips in a veggie, all in the time it takes to make a regular box.
Also, if you follow these steps, you’re adding a solid 16g of protein and 5g of fiber to your mac and cheese. Plus, you’re getting a dose of essential vitamins and minerals.

What are the best veggies to add to mac and cheese?
Here’s a list of veggies that work great in mac and cheese, especially when using a frozen option (though cooking adjustments for fresh or canned will need to be made)
- Cauliflower: Cut into small florets for a mild, versatile option
- Peas: Sweet and petite, peas bring a pop of color and a subtle sweetness.
- Spinach: Whether fresh or frozen, spinach wilts perfectly into the cheesy goodness.
- Corn Kernels: Sweet corn adds a crunch and a touch of sweetness.
- Diced Bell Peppers: For a vibrant burst of color and a slightly crisp texture.
- Chopped Kale: For those who enjoy a heartier, leafier green in their mac and cheese.
- Diced Tomatoes: Freshness from tomatoes compliment the richness of the dish.
- Sliced Mushrooms: If you love earthly flavors, mushrooms add depth to the mac and cheese.
- Mixed Vegetables: A medley of carrots, green beans and more for a diverse veggie mix.
Feel free to mix and match according to your preferences, and experiment to find your favorite combination of veggies to put in mac and cheese! Adjust cooking times accordingly if opting for fresh or canned varieties.
How to Make High Protein Gluten Free Mac and Cheese
To whip up this easy mac and cheese, start by boiling your water. Once boiling, toss in your noodles and set a timer for 4 minutes less than what the package tells you. When the timer goes off, throw in your frozen veggies.
Let it all boil for another 4 minutes until everything’s soft and tender. Give it a good drain and then place back into the pot.
Now, for the cheesy magic: Blend some cottage cheese, cheese powder, and a splash of milk in a food processor until it’s all velvety smooth.
Pour that cheesy delight back into the pot with the noodles and veggies. Warm it up, plate it, grab your fork, and enjoy every bite!
